Spring is a season full of renewed energy and celebration, so it’s no surprise that it’s one of the most popular times to get married. And for us? We’re total spring romantics. The sunshine, the fresh blooms, the feeling that anything is possible – no matter the British weather! It’s exactly the kind of energy we pour into every one of our spring wedding cake designs.
If you’re planning a spring wedding and wondering how to choose a cake that feels luxurious, seasonal and seriously special, here’s our pick of the freshest trends to inspire your dream centrepiece.

1. Floral-Filled Cakes: The Heart of Spring
You can’t talk about spring without talking about flowers. And you certainly can’t have a spring wedding cake without them.
While we haven’t used real flowers in years (many popular wedding flowers like gypsophila and hydrangeas aren’t food safe), we specialise in ultra-realistic handmade sugar flowers. They’re so stunning, they’re often mistaken for the real thing and better yet, they won’t wilt or fade. You can even keep them long after your wedding day.
Sugar flowers are a real statement, whether you choose one large bloom to sit on your top tier or a cascade of blossoming beauties. It’s a beautiful way to add a sense of sophistication to any luxury wedding cake.

Our top tip: Spring gives you a brief window to match real peonies in your wedding bouquet with sugar versions on your cake. The result? A flawless, floral-inspired wedding aesthetic from top to toe.

2. Pastel Palettes with Personality
Spring is synonymous with soft, pretty pastels—but we love giving them a modern edge.
A mix of soft tones (think lilac, blush and ivory) with unexpected pops of bolder colour creates visual contrast and gives your cake the wow factor it deserves. After all, your wedding cake will be one of the most photographed parts of the day, it shouldn’t blend into the background!

We loved working on Zahra and Philip’s autumn wedding, which featured a spring-inspired colour palette of dusky pinks, lilacs, and lots of greenery. It was a gorgeous nod to the season, paired with a romantic watercolour design (more on that below!).
3. Hand-Painted Watercolour Cakes
Our signature watercolour cakes are a year-round favourite, but they feel especially at home in spring. Soft washes of colour, delicate brushstrokes and elegant metallic accents can echo everything from your stationery to your florals.
These cakes are the perfect backdrop for dramatic sugar flower arrangements, and we’ve even adapted the style into spring macaron wedding cakes – a beautiful twist that combines our two greatest loves.

4. Spring Flavours That Make Every Slice Count
We’re strong believers that your cake should taste just as good as it looks. And when it comes to spring, we lean into flavours that are light, refreshing and a little unexpected.
From floral-infused favourites like lemon and elderflower meringue (so reminiscent of an English country garden), to unique combinations like peach melba or orange blossom and almond, there’s plenty to tempt your guests. We always recommend including one tier that’s a little different—something to surprise and delight every guest.

5. Macaron Wedding Cakes: A Spring Staple
It wouldn’t be a Bluebell Kitchen blog without mentioning macarons! Almost all of our 2025 spring weddings include macarons—either as part of the cake, as a standalone macaron tower, or styled as delicious favours. They’re naturally gluten-free, utterly moreish, and beautifully versatile.
We can hand-paint them, add edible shimmer or gold leaf, and match your wedding colours exactly. From pretty pastels to bold, vibrant hues, there’s a macaron look (and flavour) for every kind of wedding.
