In their words, they “wanted to be open-minded and simply trust that when the right one came along, we’d just feel it in our hearts.” With guests travelling from Europe, Asia, North America and New Zealand, convenience and comfort were paramount. Cooling Castle Barn’s rustic exposed brickwork, generous spaces for creative décor and more than a dozen cosy rooms gave guests a chance to settle in and truly celebrate.
But most importantly, the staff were simply incredible. Joyce and Matt said that they were beyond professional, accommodating and so helpful from the very beginning. In fact, the team’s professionalism and warmth made the couple “just know it was the place for us and where our memories would be made,” entwining the venue into the very heart of their day.
A sustainable wedding cake with a modern twist
From the beginning, Matt and Joyce knew that their wedding cake needed to be about more than just tradition. Sustainability was important to them. They wanted to minimise waste while creating something guests could genuinely enjoy throughout the day. Very quickly, one idea rose to the top – macarons. They also wanted to offer something everyone could eat, including their vegan guests. The result was a macaron wedding cake tower, crowned with a vegan tipsy strawberry and champagne sponge.

After searching for Kent wedding cake makers who specialised in macaron towers, Matt and Joyce discovered our designs at Bluebell Kitchen. As Joyce later shared, browsing our blog and images felt inspiring and more importantly, they could sense the passion and care behind every design.
After an initial exchange of emails, they met with Charlie for a consultation. From that first conversation, it felt like a natural fit. They felt that Charlie listened carefully, offered expert guidance and felt their vision was not just understood, but celebrated. When the design sketch arrived, Joyce described feeling genuinely giddy. Seeing their vision brought to life with such care and creativity made the decision feel incredibly easy.
Designing Matt and Joyce’s Luxury Macaron Wedding Cake Tower
The design process focused on reflecting their wedding colours of deep forest green and ivory/ cream. While the structure of the macaron tower was clear from the start, we suggested that they keep the top cake clean and simple, with elegant layers of gold-edged ruffles, allowing the macarons to be the stars of the show. To add depth and cohesion, we designed intricate handcrafted sugar flowers, inspired by Joyce’s bridal bouquet. This included a fluffy showstopper peony, anemones and eucalyptus.
The macaron tower itself featured a palette of beautifully varied green tones. This complemented their Spring wedding colours and included three standout flavours: matcha, yuzu and pistachio. These were bespoke flavours designed exclusively for Joyce and Matt. We tied everything together with delicate sprigs of silk baby’s breath — a subtle nod to the bouquet and boutonniere — to soften the macaron tower display.

A cake cutting moment to remember for their Cooling Castle Wedding
The cake cutting became one of the couple’s favourite memories. Their unique macaron tower drew such excitement that their Master of Ceremony called a spontaneous “cake photo session,” allowing everyone to capture the moment. Guests gathered, snapping photos of the macaron tower while laughter and joy filled the room. Their cake cutting ceremony became one of their favourite moments of the day.
As Joyce recalled,
“It was such a fun, lighthearted moment that made us feel like total rockstars.”
