Sugar flower wedding cake ideas: why we don’t use real flowers

When it comes to wedding cake design, flowers are almost always on the table, quite literally. But here at Bluebell Kitchen, we don’t use real flowers on our cakes. Not ever. And once you know why, you’ll understand exactly what makes a sugar flower wedding cake not only safer and more practical, but more creative, personal, and downright stunning.

Why we don’t use real flowers on our cakes

While fresh flowers might seem like the obvious choice, they come with a whole host of problems:

Real flowers are seasonal 

Peonies, one of the most requested wedding flowers, are only available for a few weeks in late Spring. With sugar flowers, you have creative freedom that you can’t get out of real blooms including colours that you might not find together in nature.

Flowers can wilt

Heat and humidity can ruin their appearance (and your photos).

Flowers can be toxic to eat

Popular blooms like eucalyptus, hydrangeas and gypsophila aren’t food-safe — especially when treated with pesticides.

We always explain this to couples who bring us inspiration images featuring real flowers. Once they hear why we don’t use them, they’re more than happy to explore the sugar flower route and are usually amazed at how realistic they look. Kristen and Oliver who married at Salomons said:

We love the creative ideas our couples share with us and making them into a sugar flower wedding cake reality. We’ve recreated flame lilies from Zimbabwe, added Scottish thistles, and even made jacaranda blossoms in honour of South African heritage. We’ve matched roses to football teams, added fir trees to the top tier, and made a macaron cascade interspersed with sugar posies. You name it, we’ll find a way to sugar craft it.

Some couples come to us with tropical inspiration from a special trip. Others want to include sentimental flowers like lily of the valley or lavender in memory of a grandparent. Sugar flowers make it possible.

There’s one flower that we know never goes out of fashion: the rose. Whether it’s a wild rose, spray rose, garden rose, or David Austin rose, nearly every sugar flower cake we make features at least one rose.

Designing your sugar flower wedding cake with us

Every couple works with us slightly differently and that’s exactly how we like it.

At your initial consultation, we’ll talk through ideas and inspirations. Some couples bring their invitations, Pinterest boards or bridesmaid dress swatches. Some bring a hand-drawn sketch of what they’re imagining. We take it all in, then create:

  • A hand-drawn design sketch
  • A mood board with colours and florals
  • A sugar flower plan that evolves with your florist’s input

Closer to the big day, we check in again. By then, you’ll have finalised your flowers with your florist and we’ll get in touch with them directly to make sure the colours and varieties align beautifully.

Sometimes couples even ask to see some of their flowers as we’re making them,  and we’re always happy to share. As Joyce and Matt said

How long do sugar flowers last?

This is actually one of the most beautiful things about sugar flowers. They last forever, technically.

They’re a wonderful keepsake as much as they are a cake decoration. Many of our couples choose to keep theirs after the wedding, and we provide storage tips and packaging to make that easy.

Whether you keep them in the box we provide, display them in a glass cloche, or commission a flower preservation specialist, your sugar flowers will always remind you of your wedding day.

Do sugar flowers add to the cost?

They can, depending on how many you want and the complexity of the design.

A single full-blown rose can take hours to craft, while a full arrangement may take several weeks. All our wedding cakes are bespoke and priced according to your design — we talk it all through during your consultation, so there are no surprises later on.
